Julie’s Recipe for Pumpkin Seeds
Collect the seeds from 3-4medium sized pumpkins.
Rinse in colander to most of the flesh. Leaving some flesh adds flavor.
Boil with a dash of salt using a large pot with
plenty of water.
The boiling process takes anywhere from 1.5-3
hours depending on the amount of seeds.
What you want to see is the color change to a hue of
bluish green and continue boiling for up to 30
minutes.
Boiling the seeds long enough is the secret to
tender, delectable pumpkin seeds.
Drain and rinse again in colander and allow to
dry for 10 minutes.
In a separate bowl combine:
1 stick of real, melted butter
1 tsp soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon of olive oil
I tablespoon of barbecue sauce
Mix in seeds and coat by stirring for about 5
minutes.
Add:
1 tablespoon of ground cumin
½ tablespoon of garlic powder
1 tsp of coarse ground pepper and salt to your
taste and stir.
Pour into large sided cookie sheet or low-sided
baking dish.
Metal seems to work better than glass.
Sprinkle with brown sugar and plenty of paprika.
Bake in hot oven, 400 degrees and turn often.
The seeds are done when they are very dark brown
and can take up to 45 minutes.
